Fatback is the solid fat from the back of the pig. It can be fried in pieces, added as seasoning to vegetables and stews, or rendered into lard for cooking and baking. Our pork products come from heritage-breed pigs which are born here on the farm and raised on pasture their whole lives. The fat of pastured pigs is rich and nutritious -- one of the best dietary sources of vitamin D!
